Lemon raspberry cake
I used this recipe with raspberries instead of blueberries.
I also used two 9 inch pans instead of the suggested 3 - this made the cake a bit dense and caused the edges to crisp up due to the long bake time.
The lemons and mint are from the garden.
I added 1/4 cup lemon juice to the frosting instead of 1 tbsp heavy cream. This made the icing slightly runnier but it worked out fine.
miso White Chocolate cookies
I made these Miso White Chocolate Cookies from a recipe in “A Good Day to Bake” by Benjamina Ebuehi.
The recipe calls for these mega portions of cookie dough (12), and I didn’t give them a flattening before putting them in the oven. This made the middles really thick and they took a while to bake. It would make smaller, flatter cookies next time.
Passionfruit tart
I used this curd recipe and this crust recipe. I hadn’t made a tart crust before so it looked a little funky but tasted fine. I didn’t have pie weights, beans, or rice, so had to use pasta which got a little crispy by the end of it’s tenure on top of the crust after the first baking.
The passion fruits were from a cousin’s backyard vine - very tropical and refreshing tasting and makes a great summer dessert.
Basic Chocolate Cake
Basic chocolate cake from “A Good Day to Bake” by Benjamina Ebuehi.
I halved the recipe and it was perfect for a 6” pan.
lemon blueberry cake
I used this recipe - the cake was dense and I attributed the long bake time and slightly mushy center to both the recipe but also my cheapo stainless steel pans. It was delicious though - I also added a bit of lemon juice to the cream cheese frosting.
The lemons are from the garden.

Take 4! Chocolate Raspberry Cake with this ganache recipe.
I frosted over the cake before pouring the ganache, but yet again the ganache was too cold and was too thick to run well over the cake.
Tasted great, looked ok!
